America has a love affair with carbs. Not just any carbs, we love the “fast” or “simple” carbs. The bad ones. Fast carbs raise insulin levels. Insulin turns carbs to fat. There you have it. When you eliminate simple carbs you don’t make insulin and no fat gets produced! The other fabulous result of restricting carbs is that your body is forced to make its own carbs from the fat you have in storage. Dieters just want to button their jeans without holding their breath. But hey, if you want to lose weight you need to know some scientific theory. So pay attention.

The other problem with “meat and veggies only” diets is that your not getting the vitamins, minerals and electrolytes found in all food groups you’ve eliminated (fruit, grains, dairy).
